Been asked to wire up gas valve in pub kitchen and all the gas fitter has left is a stop button, when I wired many of these for a catering firm years ago there was a control box witha current sensor that worked with the fan. What are the current requirements?

Is there a minimum height betwwen a 6 burner and the canopy?
 
We use the control units made by S&S Northern .They use current sensing on both inlet and extract fans much more reliable than the probes into fan ducts that always block!.
We fit stop buttons at ever possible exit from kitchen.
What hight is canopy above burners?
Should really have asked hight from burners to grease filters thats minimum of 450mm to help prevent fires.

Commercial catering is a fairly complicated area and each kitchen should be taken on its own merits.

Has it just been installed as a safety cut off or is it supposed to be linked to an interlock?
If it is existing, it may not have to have an interlock, although it is safer with one. New kitchens will have them and certain categories of existing appliances should have them.

There are minimum heights from range top to canopy yes as well as canopy overhang dimensions.
Normally manufacturers instructions should be followed but if they are not available 450 - 1350 from the top of the appliance to the base/nearest part of the filter/mesh. (450 mm minimum from the cooking surface to the BOTTOM edge of any filter to reduce risk of excessive temperatures of fire).
 
It is a new kitchen with all new appliances so should it just be a safety cut out or an interlock?
If it is a new commercial kitchen then yes it must have an interlock provided to prevent the gas being used without ventilation/extraction running. The emergency stop button should be linked into that interlock and the button should be in a suitable location, normally next to an exit. If there is a mechanical incoming provision that can also be a part of the same interlock system.
