When I was training, my mentor told me that in order to get a proper seal with chrome pipe and compression fittings, it was necessary to remove the chrome plating at the end, in order to get the olive to "stick". What does everyone else do? I have always done this but have now been told that it is not necessary.

Not necessary on chrome, in fact your making it worse. Just a little paste will do.
when soldering you will need to remove the chrome.

Need to file ir for push fit as the chrome is harder than the grabring in the fitting so it cant bite and just pops off.

Some chrome pipe can be soldered some can't. Better to just fime it off.

Nit necessary for compression fittings
