There are all sorts out there.
Any reason why I can't just use a nut and olive and screw the nut directly to the tap threads?
 
I tend to just use nut and olives on most taps, unless bath due to being slightly more difficult. just a different process to a tap connecter as most the time the taps cant be tightened up first as you need play for the pipe.
 
You can if the tap is set up for an olive (bevelled)
And as long as you can hold the tap firm enough while you tighten it. Often you can't, which is why tap connectors have a flange and fibre washer, which doesn't need to be as tight. Also things like toilet cistern feeds are often plastic, unsuitable for an olive.

That's why you pre tighten it normally a coupling etc

Watch your depth tho might not be the same
