Would anyone know if I could use 2 hives with out a hub and buy a separate hub for a house with 2 heating zones?

I quoted just before Christmas and the hive were £135 each but now they are £160
2 without a hub are £100 each and a separate hub is £80
 
Have you tried Hive direct mate? £64 for hub, £134 for stats.

Don't see why not, but you could buy the Normal one for £160 with the hub and then just the extra stat on it's own for a multizone for £100. You'd be still £260 then.
Good idea but it seems there are no V3 multi zone stats available and no V2 full kits available during the changeover period
