Do you guys put the waste pipe and the hot and cold inside the pedestals?

Some of them are pretty tight!!!

Do you ever trim up joists to make way for waste pipes or is this not a job for a plumber

What if there isn’t enough allowance for a trim?

Not notch, cut away some joists and add trimmers to transfer the load

No never, it seems a cool thing to do but when the trap needs cleaning out its murder. It cost one of my customers plenty once when her gold tooth fell out , so I had to take out the whole ped affair because all the pipework was neatly inside the pedestal
and inaccesible in order to get it back Rob Foster
