Is this ok, as long as run in 15mm copper, an inch away from the rear of the oven? OR are there some regs that say no? Not much choice with current layout of kitchen.
 
Running horizontally in 15mm copper along this wall then freestanding oven placed against the wall. Will be about an inch gap between oven and pipe

Normally you will have a pipevoid / somewhere to run the pipes so you should be fine
 
Go low down and why not cut a chase in the wall to get it right out of the way. I wouldn't bother plastering over it, just felt lagging and clips.
